Aiona, a new Mediterranean restaurant, officially opened its doors on April 19, 2026, in downtown Sacramento, taking over the space previously occupied by the Esquire Grill. The establishment is the latest venture from the husband-wife duo, Chef Deneb Williams and Elizabeth-Rose Mandalou, who also own Allora, an upscale Italian restaurant in East Sacramento. Aiona aims to create a vibrant dining atmosphere, contrasting with the serene ambiance of Allora.

The design of Aiona features vaulted ceilings adorned with wave-formation panels, which serve as an attractive noise-baffling device. The decor embraces an '80s feminine aesthetic, incorporating teal and dusty pink tones, gold finishes, and curved motifs. A striking Deco-inspired mural, inspired by Greek mythology, enhances the entrance, symbolizing themes of cyclical time, renewal, and rebirth. The restaurant's open kitchen, highlighted by an open-fire grill, is central to its concept, allowing diners to experience the cooking process firsthand.

Dinner service runs from 5 p.m. to 9:30 p.m. on weekdays and extends to 10:30 p.m. on Fridays and Saturdays. Aiona is closed on Sundays.
