The Scale of the Problem
Across the world, people consume roughly 40 % fewer vegetables than dietary guidelines recommend, a shortfall that ranks among the top five dietary risk factors for disease. Findings of the International PNAS Study
An interdisciplinary team led by agriculture scientist Maarten van Zonneveld of the World Vegetable Center evaluated diversity in the edible parts of 79 major vegetable species listed in the FAO’s *The Plants that Feed the World* database (legumes excluded). The researchers highlighted that many nutrient-dense vegetables—such as spider plant, slippery cabbage, bitter gourd, and pumpkin—are either regionally confined or poorly conserved in gene banks. Only a few local varieties of these crops are stored, creating gaps that hinder breeding for larger-scale production. The study notes that while crops like lettuce, onions and tomatoes dominate global diets, over 1,480 vegetable species are experiencing biodiversity loss at a time when food systems urgently need diversification.

The underutilized vegetables identified by the study often contain higher concentrations of vitamins and minerals than widely cultivated staples. For example, spider plant is recognized for its resilience to climate stress and dense nutrient profile, while slippery cabbage can markedly improve women’s and children’s nutrition in the Pacific. Pumpkin, despite its drought tolerance and beta-carotene richness, remains underexploited. The researchers argue that preserving and expanding the genetic pool of these crops could bolster dietary quality and enhance agricultural adaptation to heat and water scarcity.

The authors recommend a coordinated global initiative to align local conservation efforts with broader dietary improvements. Practical actions include: cultivating heirloom and landrace varieties in home gardens, saving seeds for future planting, and sourcing a wider range of vegetables from farmers’ markets and independent grocers. By integrating these approaches, consumers and producers can help sustain the vegetable biodiversity essential for both human health and planetary resilience.
