Recent research from Washington State University (WSU) indicates that incorporating augmented reality (AR) technology into restaurant menus can significantly enhance customer interest and engagement. The study, published in the *International Journal of Hospitality Management*, reveals that diners who interacted with AR menus expressed a stronger intention to visit the restaurant and were more likely to share their experiences with others compared to those using traditional printed or QR-code menus.

The research, led by Soobin Seo, a professor of hospitality business management at WSU, focused on how AR could improve the presentation of farm-to-table information, such as ingredient sourcing and food production methods. Seo emphasized the growing consumer demand for transparency regarding food origins, stating, “Augmented reality allows restaurants to share that information in a more vivid, interactive, and engaging way.”

Study Methodology and Findings

In the first of two experimental studies, participants were shown one of three menu formats at a simulated restaurant: a traditional printed menu, a QR-code menu, or an AR menu. The AR menu enabled users to view three-dimensional representations of food items on their smartphones and access detailed information about individual ingredients. Participants reported feeling more immersed in the dining experience and believed they gained a better understanding of the food's origins, leading to increased likelihood of visiting the restaurant.

A second study examined the effects of AR menus on perceptions of chain restaurants with differing brand images, specifically Panera Bread and McDonald’s. While AR menus positively influenced perceptions for both brands, McDonald’s experienced a more significant increase in perceived healthiness and visit intentions. Seo noted, “When expectations are low, transparent and interactive information can have an outsized impact,” suggesting that AR could help mitigate negative perceptions associated with fast-food brands.

Strategic Fit and Broader Implications

The researchers highlighted the importance of “strategic fit” when implementing AR technology, noting that it should align with a restaurant's overall brand image. Although AR menus are not yet widespread, they are becoming increasingly affordable and accessible, even for independent restaurants. The study suggests that beyond marketing benefits, AR menus could foster sustainability by promoting transparency in sourcing and strengthening relationships with local producers.
