Roasting Process

Preheat the oven to 200°C (390°F) and heat 150ml of olive oil in a roasting tin. Once the oil is smoking, add the potatoes, sprinkle with ½ tablespoon of fine salt and 1 tablespoon of hawaij, and roast for 40 minutes, turning once for even crispiness. Finally, toss the roasted potatoes with the shallots before serving.
